Oden
Oden is a type of one-pot dish (nabe), consisting of several ingredients. It is said that the “den” in oden comes from “dengaku,” miso flavored tofu or kon-nyaku, a type of jelly made from a root vegetable called konjac. In the early Edo Period (1603-1867), oden was similar to dengaku. It was flavored with miso. However, as the Edo period developed, dried bonito dashi, which was originally popular in Edo (Tokyo), started to become more common outside of the capital and replaced miso as the main flavoring.
